Breakfast is amazing with Pancakes

It's on lazy summer days that my appitte calls for a filling breakfast. You would think that I would want something lite and fruity, but oh no no it has to be pancakes. This has to be my very favorited food to have. If I am feeling down, or if I am happy or even just waking up hungry, pancakes are my go to comfort food. I like all flavors and all textures, but chewy pancakes make me smikle. I know fluffy is the way to pancake heaven, but I can get there doing chewy.
This morning I woke up with my mind on pancakes. I knew i had toi make some and they had to be special. I have been meaning to do a pear and apple combination for a while and there was no better time to do so. This is a pancake lover home and I knew I would have no trouble finding help to eat the goodies, Even the Hubster enjoys a plate of pancakes.
So here we go with:
PEAR APPLE PANCAKES with fruit compote
                      1 cup all-purpose flour
                       1tsp baking powder

Get Busy For Father's Day

Father's Day is upon us again and it's time to celebraate the men in our lives.  Whether it's your father, husband, uncle, brother, son or that special man that has been their for you and means the world to you, let them know what's in your heart. Not everyone have a male figure that have help mould and transformed them into being who they are and have helped their transition.
This year, in my hone i am happy to say my father will be in town for the first father's day in many, many years. So, this definately a treat. We will be celebrating by having a Bar-be -que with all the dlicious usuals. I had to do a tablescape for the occasion, using my father's favorite color;blue.
This tablescape is super simple, as my husband does not like a lot of fussiness. Most of the dishes I bought at Home Sense, while others were bought at the Dollar Tree.

Changing Your Decor for Summer

When winter finally step through the door of last season, it is always a celebration  to bring the warmer weather in. With this warm weather comes the feeling of  revitalization, energy and rebirth. This is when you shedule in time to go through the the things you have accumilated over the pass season and purge the unneccesary items. Donate them to someone that has an immediae use for them.
It is also a time to change out your decor for things that will lift your mood from the pass gloomy months of winter. Put away the flannel sheets and take out the soft colorful cotton ones. Trade in your throws and cushions or lighter versions and don't forget flowers transform any space.
One thing that changes every season and sometimes twice for the season is my table scape. I love beautiful colorful things, but I am also frugal. Having money smarts is what I endorse. Therefore, saving is one of my priorities whenever it's time to spend. This leads me to my Summer Tablescape.

The best open face veggie burger

The taste of a good home made veggie burger is unbelievable. All it takes is good ingredients and a bit of love to create a master piece. it is undeniable a healthier way to go for a beloved treat that can run up in the hndreds when it comes to calories.Making this incredible burger calls for:

Veggie Burger

1 cup mushroom; chopped in small pieces
1/2 cup shredded carrot s
1/2 cup shredded zucchini; excess water remove
1/2 cup finely chopped onions
1 tbsp coconut oil
1cup oatmeal; soakedd in 1/2  cup water for 5 mins

1//4 tsp each of dried oregano, basil and thyme.
i tbsp each of barbeque sauce and soya sauce
Salt and pepper to taste

In a sautee pan add the first four ingredients and sautee for five minutes with  coconut oil. Add all other ingredients and combine well. Remove from heat and set aside to cool for 10 mins or cool enough to handle by hand.
Shape into serving size patties. Pplace patties on a line baking tray and bake for 20 minuts at 350 degrees.

What's cooking in Reesa's kitchen

It's been on of those days where you wonder what will be cooking in Reesa'a kitchen. Well, I decided that it was a good day to sautee some chicken and get out the pasta. I have be trying to hold off on pasta for a while, but being a carb-olic makes it darn impossible. So, I have decided to reduce my portions, which has been very hard. Because I love my cooking, it's tasty, very flavorful, where the flavors marry and produce a tantalizing taste to the tongue makes me more than i should. Or, that's what I tell myself.
Well, today I got out a lovely organic chicken breast and seasoned it with my favorite blend of seasons. I t hen, placed the chicken covered, into the refrigerator for two hours. later when I was ready to cook I removed it from the fridge and began sauteing in coconut oil. This
 oil is my choikce of oil since it is a medium fatty chain oil, much healthier. I then sauteed vegetables and seve the chicken with pasta and parmesan cheese.
