My Obsessions

Everyone has issues and I am no different from them. I seem to concentrate more on my weight and on my internet business, why these two things and not two others? I am still trying to figure it out. There are a lot more important thing going on in my life but, for some reason these two takes presidency.

my weight issue began when I had gotten really sick and went from a size 6 to a 14 and that was a shocker for me. I cannot accept myself at this weight because I don't recognize myself. So, it has been a up hill battle. Over the years I have developed some bad eating habits such as, eating carbs at night, eating cakes and cookies, more than I need to and have control of my portion size. I am a sugarholic.

Now, with my internet business, I have a thing for being successful in whatever I do. I rarely quit anything I start and I work day and night for success. My motto is "you get what you put in". Where much is put out then, much is receive. I am obsessed about gaining a cer…

Tastiest Banana muffins

Hey everyone remember me lol. I haven't posted in so long, because I had Aa lot on my plate and I was starting a new online business that took an extreme amount of time. However, I am so glad I am back ....yeah
Well, bananas, bananas I just love em. They are tasty, smooth and cremey. They are filled with potassium which can help regulate blood pressure. They can be eat at any stages; green,boiled in salted water for 20-30 minutes or peel and grated and make a delicios porridge. Ripe, eaten as a fruit or use in pies, flans and fruit salads. Over riped, can be used to make banana bread or muffins. Yesterday I had several bananas left over and I decided to make some banana muffins. They came out fantastic and I had them with my tea that afternoon. They do great with tea and just a snippet of butter. try some banana muffin today

Bananas, these creamy, sweet tasting fruit are so delicious any way you have them. I usually have them plain but sometimes when I purchase more than we can consume in the time frame,they get too ripe and I have to make some sort of dessert. Today, I made banana muffins. They were easy to do and came out very moist, I think it's because I didn't mash the bananas smooth but left it a bit chunky and added two tablespoon yogurt.Here goes

Moist Banana Muffins

4 bananas smash to a chunky texture
3/4 cup sugar
1/3 cup melted buttered
2 eggs
2 tbsp plain yogurt
1tsp vanilla
2 tbsp main yogurt
2 cups a.p flour
1tsp baking soda
1/2 tsp baking powder
1/8 tsp salt





Bananans are my favorite fruit and I always te nd to buy more than actually is need at home. So, I end up will a surplus. On this particular day I though of making a banana bread and to get a few muffins from the batter.

Tastiest leek and onion quiche

It's been one of those crazy days with graduation at the university and food to prep, it leaves no time for person chores. Last week was my birthday and I had a party, but here is the funny thing, I cook for my own party and that's because I truly enjoy cooking. There were about 35 people that attended and that was a success.Now, back to why I cooked for my own party, it relaxes me and take my mind of stressful things.
Well, today I had to whip something up fast for supper and I thought what I have not made in a month that I really like? My miund went to quiche so, I headed off the the big store. I was in Walmart and I saw these really fresh looking leeks and they also had onions on sale for .25 cents per pound. Obviously that was not going to pass me by as I love a good sale. So, I bought all the items I need for a quiche and whipped one up fast from an old recipe I had developed a while back. Here goes, I hope you like it as much as I do. Curry Chicken and potatoes

I had to do this dish just because I had made roti and I don't think I would enjoy the roti without a curry dish. So, I had gone out in search of mock chicken strips and I was lucky enough to find some at Krogers. They have a really good selection of vegetarian products which I like.On my way to the store I was thinking maybe I didn't need to put the chicken in because i know some times in the islands they use just potatoes, but i am happy I followed my mind and added the chicken...turned out really good YUMMY.

Mock curry chicken and potatoes
4 medium size potatoes(washed, peel and cube into 1inch cubes)
1 cup cube mock chicken of your choice
1 mediun onion diced
2 cloves of finely chopped or crushed garlic
1/4 tsp hot chilli powder
1tsp ginger paste or grated
1 sprig thyme
1/2 green pepper
2 cups vegetable stock
1tsp. gara masala
1tsp curry powder
salt to adjust taste

Making Roti and the works

Well, I am taking up this blog back as I had put it away for a bit. Right now I am trying to go vegetarian and I am learning to cook a lot of new things. I love Indian food and also Caribbean so, that's where my interest lies now. If I slip up on the vegetarian cooking please feel free to let me know. My family is taking the transition pretty well and seem to be enjoying my experiments.We'll start out with Caribbean cooking; Roti is made famous by alot of island in the Caribbean, but Guyana and Trunidad seem to be the most popular known for this spendid morsel.
Yesterday my task was to make Roti with CURRY POTATOES AND MOCK CHICKEN, which turned out amazing. By no means I'm saying this is the correct way to do as this site is a learning site for you and me. Have a look at the pictures. Take into consideration I don't have a tawa and had to make it in a iron fry pan which I thought came out awesome.
